Sour Meat is a traditional local food of the Xiangxi Tujia and the Miao people. Every time when a distinguished guest comes, the host will take out some sour meat from a jar and stir-fry in the wok. The corn flour coated all over the meat becomes golden after being fried, setting off a special fragrance. Since it is a spicy and sour dish which is best cooked in Xiangxi Autonomous Prefecture, the dish is named Xiangxi Sour Meat. It can often be found in restaurants in tourist areas of Xiangxi.
