Bean dregs, also called “vegetable tofu”, is a popular dish among the Tujia people. After being soaked in water, the soybeans are grinded into paste and boiled in a pot. Then add leaves of pumpkin and radish and boil for a few more minutes, and the dish is finished. Though the procedure is simple, bean dregs is highly nutritious and delicious.
